Malpua is a sweet loved as a dessert or a festive snack, resembles a pan cake which has been drenched in a resplendent hot sugary syrup, is loved in India, Pakistan and Bangladesh. Having lived in the Eastern part of India for a considerable amount of time my rendezvous with MALPUA has been quite frequent.

This dish was made in my family whenever there was a celebration or festivity. This super delicious Chicken is cooked in a white gravy with Curd and a paste of cashew nuts seeds as the main ingredients. A magical spice mix is added to the chicken while marinating which brings out such gorgeous aromatics that I start salivating while the chicken cooks.

FUSION BREAD PAKORA - MY MIDNIGHT HAUL



Suddenly in the middle of the night hunger strikes. Is it a fragment of my imagination, maybe I am dreaming. A rumble, followed by a grumble breaks the pin drop silence of the night. It is my tummy, gently tugging me awake. I quietly turn to see Mr. S in a deep slumber and I get out of bed trying not to wake him up. Straining my sleep caressed eyes in the dark I grope my way towards the door and hit my toe on the leg of the side table. The pain jolts me fully awake and without throwing another glance at Mr. S I scamper out of the room, straight into the kitchen and towards the refrigerator.
