Thai Beetroot Coconut Soup Recipe ~ Pink For October Series


We, women, have been constituted in such a manner that we tend to lose ourselves in taking care of others. As daughters, sisters, wives, mothers, aunts, grandmothers we have an inherent quality of putting others before self, especially when it comes to family. Well, though it is hard to generalize and there will be exceptions to this, I am till date, yet to come across a dame who will say me first. When I sit back and think, I am made to believe that when Almighty was creating a girl, more love, care and sensitivity went into that creation. That's why we are what we are, special, epitome of love and kindness with a heart so giving, patient and nurturing. Not that I have not seen men who have these qualities ( was daughter to one and now married to one ), but again they are not at large, somewhat a rare gem to find and treasure, but not impossible to find. In this case you have to look high and low but when it comes to a lady, you will surely bump into one with soft, gentle, loving demeanor and who will put family before self, quite frequently.

I therefore leave no opportunity to celebrate Almighty's most beautiful creation, WOMEN. Whether it is through a simple gesture like a Thank You or by cooking a delicious lunch, or by taking them out and pampering them or just sending them a message to tell them what they mean to me, I try my best to not let go of any chance when I can tell them how lucky I am to have them grace my life. We all are surrounded by such amazing mademoiselles who are often exemplary when it comes to holding their family together with their unflinching love and utmost devotion. You are the backbone of your family and absolutely irreplaceable. So isn't it time that the most important part of any family, sent a little thought their way? It sure is. This is about time, we take that step, turn around and give us a little attention and do things for ourselves, instead of postponing them on the pretext of family over self.

Give yourself a teeny weeny consideration and divert an itsy bitsy attention your way too. Don't you realize what is the outcome of that family in which the spinal cord is broken? That family will fail to stand and will crumble down surely. I am absolute that this is not what you want for the family that you love so dearly. Therefore don't neglect, don't postpone, all can wait but not that sense of unhealthiness which you have been deferring correction on the pretext of putting other mundane family issues up on the dais of importance. Your body needs you as much as your family demands your attention. Then why this partiality? Why is it that family will always outweigh your own self. If you think, you will realize that your well being is so important and directly proportional to the happiness of your family.

I dedicate this post to all the extraordinary women I know and also those whom I would love to know. This post is a reminder call for all you pretty ladies out there. If your body is posing up even a minuscule issue, please don't brush it under the pretext, other things require my attention. See a health care professional right away. Today with the greatest advancement in medical science no ailment can go out of hand, if we don't allow it. There is a cure for every malady, the secret is you give it a fight when it is weak. If the disease is allowed to strengthen, it becomes difficult for a full proof victory, but even then I know people who have come out victorious. Only you reduce your chances of winning by wailing away precious time. 

As we all know that this month is dedicated to "Breast Cancer Awareness " so this is the right time to make the tides turn in our favor. Empower yourself with knowledge and equip yourself by being alert and giving your constitution priority. Let bygones be bygones. Time indeed to take this aspect of your life in your own hands. I am devoting this post to US so that WE pledge to for once put OUR SELF along with the family in the same priority rung of the ladder of numbers.

The dish I am sharing below is a pink hued, super nutritious, flavour packed, powerhouse of taste and very easy to prepare. Presenting Thai Beetroot Coconut Soup. The strong notes of lemon grass, kafir lime leaves and galangal totally mask the not so likable smell of the beetroot. Coconut cream gives this Vegan Soup more flavour depth and a creamier texture. There is hardly any prep time required and the cook time too is very less. This soup can be rustled up in no time even after your guests have arrived at home without prior notice. There is no one till date that I have cooked the Thai Beetroot Coconut Soup who have ever expressed any taste displeasure. By the way this recipe was given to me by a chef at the Mandarin Oriental, Bangkok and it was a part of their Spa Cuisine Menu. I was not into blogging those days but was even then a prolific lover of food. So I had scribbled the recipe behind the take away Spa Menu, but had forgotten to write the name of the chef.  So let's take a look at the ingredients.

Thai Beetroot Coconut Soup Recipe ~ 

AUTHOR ~ PIYALI MUTHA
SERVES ~ 4
CUISINE ~ THAI / ASIAN
TYPE ~ SOUP 

INGREDIENTS ~

1/2 Tsp Sesame Seed Oil, or use any other oil
1 Tbsp Garlic, chopped
2 Tbsp Shallot, chopped (use onions if not available)
1 Tbsp Galangal, chopped (use ginger instead if not available)
1 1/2 Tbsp Lemon Grass, chopped (use lemon rind if not available)
1 Chilli, I used thai bird eye chili, use any available or omit if you do not like a spicy soup
1 Large Beetroot, grated
4 Kaffir Lime Leaves
1/2 Cup Vegetable Stock
400 Ml Coconut Cream
Salt to taste

Let's Make Thai Beetroot Coconut Soup In Easy Steps ~

1) Take a pan or a wok. Pour Oil. Throw in Garlic. Saute till fragrant. 

** Add Shallots and saute till soft.
** Now throw in the Galangal and Lemon Grass. Saute for a minute.

2) Next add Beetroot. Saute the beetroot till the raw smell disappears.

** Throw in the Kaffir Lime Leaves and saute for 30 seconds.
** Remove from heat and cool down a bit.

3) Transfer everything to a food processor. Adding little water grind everything to a smooth paste.

** Transfer this paste to the pan.

4) Add Vegetable Stock and stir well. Bring to a boil.

** Season with salt.

5) Finish off by adding the coconut cream. Simmer till you get the desired consistency. This soup this neither too thick nor thin. But you may decide the consistency of the soup as per your liking.

Transfer into individual soup plates or bowls and serve with rustic bread ( I used French Village Bread) or bread sticks. If you wish you can garnish with Kaffir Lime Leaves, Parsley, Basil, Green part of the Scallion. Serve with Lemon or Lime on the side.
