DATE AND TAMARIND CHUTNEY





This very versatile sweet, tangy and a little salty dip or chutney is an integral part of all chaats and is also served as an accompaniment for most Indian snacks.

DATE TAMARIND CHUTNEY RECIPE:

INGREDIENTS:

1) 200 Gms Seedless dates
2) 2-3 Tbsp Tamarind pulp
3) 2-3 tbsp of liquid or grated jaggery.
4) 1/2 Tsp of roasted cumin powder
5) 1/2 Tsp of roasted coriander powder
6) 1/2 Tsp of roasted dry chilli powder
7) 1/2 Tsp of Dry ginger powder/saunth
8) Black salt to taste

MAKE CHUTNEY WITH IN EASY STEPS :

1) In a thick bottom pan put the seedless dates and the tamarind pulp. Cover them with enough water. Bring to a boil. Then on low flame cook the dates till very soft.

2) Cool the contents of the pan and in a food processor grind them to a thick paste.

3) Transfer the paste back to the pan. Add liquid Jaggery / grated Jaggery, roasted cumin powder, roasted coriander powder, roasted red chilli powder, dry ginger powder, black salt and mix well.

4) Add enough water that you get a thick pouring consistency of the chutney. 1 Cup or 250 ml of water should be fine here.

5) Bring everything in the pan to a boil. Check for seasoning and add black salt if required. Remove from flame.
TIP: Add more Jaggery or tamarind pulp or salt to get the perfect of salt, sour and sweet.

6) Cool to room temperature and transfer into a glass jar. Let it cool completely and then tightly place the lid and refrigerate for future use.
