EGGLESS VEGETABLE OMELETTE SANDWICH - HEALTHY KICK START TO YOUR DAY


SANDWICH is one dish where you can let your imagination take an endless flight and get as creative as possible. In fact you can have a different type of sandwich every time and continue this process of playing with your ingredients, adding , omitting, making it simple, making it elaborate, just as you and your innovativeness decide.   

Food historians have a very interesting story to tell about how sandwich came to be known as sandwich and also how it gained its popularity. It was the year 1762. In England there Lived an Earl named John Montagu who was the 4th Earl of Sandwich. Dear friends, Sandwich is the name of a town in the county of Kent located in the South Eastern Part of England. 



This nobleman Montagu was addicted to gambling because of which he would spend long hours at the card table. On one such gambling spree which extended into long hours, the earl was hungry and so he summoned the house cook and asked him to cook up a dish which would be filling and which could be eaten at the card table itself. The house cook then cooked some delicious meat and packed it between two breads. Montagu loved this so much, that he ate it everyday and soon word spread in the London Society circles about this new concoction which was thus named after Earl Montagu as Sandwich.

However the credit of the nemesis of sandwich can neither be given to Montagu nor his house cook. For long before them the Mezze Platters which the Turkish and the Greeks served were dips, cheese and meat all filled up between layers of bread. In all likelihood both these men might have drawn inspiration from the Turkish and Greek Mezze Platters on any of their trips to the Mediterranean Region, which must have led the house cook to put together the SANDWICH on that evening.


That was interesting trivia. Friends For our BLOG HOP, themed "SANDWICHES" I decided to do a VEGAN SANDWICH which is quite healthy considering you can put in loads of veggies in it and it uses very little oil . The interesting twist to this Sandwich is a fusion brought about by making an eggless omelette otherwise known as Cheela in India as the main filling of the sandwich. The eggless omelette or Cheela is made with Gram Flour/Besan, infused with spices and aromatics and lots of veggies thrown in, just to give you that perfect healthy start to your day.

EGGLESS VEGETABLE OMELETTE SANDWICH RECIPE:

TIME : 15 MINUTES PREPARATION + 20 MINUTES COOKING + 5 MINUTES ASSEMBLING

INGREDIENTS :

1) One small tomato deceeded and finely chopped
2) 1/2 Onion finely chopped
3) 1/2 Capsicum finely chopped
4) 2 Green Chillies Finely chopped
5) Coriander leaves
6) Salt to taste
7) 1/4 Tsp Asafoetida / Hing
8) 1/2 Tsp Red Chilli Powder
9) 1/4 Tsp Turmeric powder
10) 1/2 Tsp roasted coriander and cumin seed powder
11) Tomato ketchup
12) 1 Cup Gram Flour / Besan
13) Oil
14) Few Slices of Toasted Bread


GET COOKING WITH ME IN EASY STEPS :

STEP 1:
Deceed the Tomato and chop it finely. Chop finely onion , capsicum, green chillies. Keep ready to use.

STEP 2:
Let's make the batter. In a mixing bowl add Gram Flour. Next put in all the dry spices, that is Turmeric Powder, Red Chilli Powder, Roasted Coriander and Cumin seed powder, asafoetida. 

Mix everything in the bowl with 1/2 Cup ( 125 ml approx ) of water. This should suffice to make a pouring consistency batter. With a whisk mix everything in the bowl nicely making sure that there are no lumps.


Next goes in finely chopped green chillies, coriander leaves. Mix well. Now we don't want a very thick batter. So at this point add some more water. ( Totally 1 1/2 cup water I have added (250 + 125 ml approx). You may adjust the amount of water according to the kind of consistency you want of your batter.


Next throw in all the veggies, onions, capsicums, tomatoes and season with salt. Mix everything together. And the omelette batter is ready. After adding the veggies if you feel your batter is too thick again add more water and get your batter to pouring consistency.


STEP 3:
Once the batter is ready, grease a non-stick pan with little oil. Make sure to spread the oil evenly. Once the oil is hot spoon in the Batter. Spread out the batter evenly on the pan. We don't want a very thick omelette. Cook this batter on very low flame. Brush a little oil on the side up before you flip it. Check if the bottom side is nice and golden brown. Then flip it.

Press likely on the side up with your spatula to ensure even cooking and also that the veggies are cooked properly. Don't be in a hurry to cook it otherwise it will taste raw. Once the other side too becomes golden brown , flip the omelette over and get it out of the pan on to a plate. Finish the remaining omelettes.

STEP 4:
Once the omelettes are ready, we can start assembling the sandwich. On the slices of toasted bread apply tomato ketchup on one side. Cut the omelette into two, fold it into half and place it over your bread. You can cut another quarter if you want to have a thick sandwich. Place crunchy veggies like cucumber, onion, tomatoes , lettuce leaves and close your sandwich. Cut the sandwich into half or leave it as it is and plate it.


Serve with tomato ketchup or chutney of your choice.

  • The eggless vegetable omelette is a very nutritious, filling recipe. 
  • It also makes for a very exciting tiffin box snack for kids.
